I hope you are doing great. I am trying a new format so my French readers can benefit from all my tips and tricks as well. Let me know how you like it.
I wanted to share this quick recipe, loaded with veggies and great ingredients to make for bigger and smaller children. It is extremely healthy and is gluten-free as I use chickpeas flour. You can, of course, use whole-wheat or all-purpose flour. I happen to use the chickpeas flour for the protein addition. In addition to that, there are two anti-inflammatory ingredients that are garlic and ginger. It’s probably from my Chinese heritage but when I cook, I tend to always combine these two ingredients together. I sometimes add tumeric powder as well.
Veggie fritters have always been a quick fix when I don’t know what to make for the children as an afternoon snack. I want it to be nutritious but light so they still have room for a nice dinner.
Plus, it takes literally few minutes to make – apart from blanching the broccoli florets step. I usually blanche them in advance so I can toss some in their school lunch box.
